Help your family embrace God&rsquo;s love for the world by developing a habit of learning about other cultures. Read this story together to learn about and pray for the Dungan (DOON-gahn), an unreached people group living in Central Asia and Mongolia.
Come with me to the river valleys and rolling hills of eastern Kyrgyzstan (KEER-giz-stahn) where sheep, cows, and horses graze at the foot of snow-capped mountains. Here, most Dungan families cling to their Muslim traditions and have never heard that Jesus loves them. Do you see that winding, dirt road? Hi, I&rsquo;m Zofia (zo-FEE-ah). Welcome to my home. I&rsquo;m boiling water for tea. Come inside and join my family for dinner. Would you like to help me arrange freshly baked bread on a plate? Let&rsquo;s fill these small bowls with homemade raspberry and apricot jam. My mom is busy rolling out noodles. In a few minutes, we can watch her wrap the end of the noodles around her fingers, stretch them out between her hands, and slap them against the table to make them as long as possible. Like our Chinese ancestors, we believe that long noodles represent long life.&nbsp;
Mom will use these noodles in one of my favorite dishes&ndash;Ashlyan Fu (AHSH-lahn foo)--a spicy, cold soup with vinegar chili sauce, eggs, and fresh herbs. The carrots in this soup were grown right here on our farm. Father also grows potatoes, cabbages, garlic, and beets. In the fall, our school closes for a few days so that we children can help harvest beets. Most Kyrgyz families in our area raise animals, but as Dungans, we are proud of our farming heritage and reputation for having the best produce in the whole country!&nbsp;
Tomorrow, you can come to school with me. We usually speak Russian at school, but for a few hours each week, teachers speak to us in Dungan so we won&rsquo;t forget our own language and heritage. On Friday afternoons my older brothers go to the mosque to learn the Arabic alphabet. Soon, they&rsquo;ll be able to recite and read from our Muslim holy book, the Koran (kor-AHN).
For now, here are your chopsticks. Join my family around the low table, enjoy your dinner, and listen as Father relates the story of how our people settled here&hellip;&rdquo;Long ago, our Chinese ancestors came here seeking freedom from religious persecution and a better way of life. They crossed high mountains in the dead of winter and arrived in this Soviet territory. Here, the Russians called us Dungan, which means Chinese-speaking Muslims.

If the Dungan region had an official dish, it would be Ashlyan Fu (AHSH-lahn foo). This popular dish is served in homes, restaurants, and outdoor food stalls. Prepare a version of this spicy, cold soup with your family. You will need:
-1 bell pepper
-1 carrot
-2 tomatoes
-2 green onions
-2 tsp vegetable oil
-&frac12; cup water
-1 package of your favorite noodles
-2 eggs
-1 tbsp milk
-2 tsp vinegar
-spices to taste: salt, pepper, garlic, dill, parsley, pepper flakes, dried chives

Chop the bell pepper, carrots, green onions, and tomatoes into long, thin strips.

Put 1 teaspoon of vegetable oil into a heated frying pan at medium heat. Add the vegetable strips and stir vigorously. Add some garlic, salt, and pepper. Fry for one minute.

Add a half cup of water and cook the mixture for 5-7 minutes.
</li>
<li>
While the sauce mixture cooks, beat the eggs and milk in a bowl. Pour into another frying pan at medium heat and make an omelet.&nbsp;
</li>

Let the omelet cool for a minute. Cut it into long thin strips.
</li>
<li>
Mix the egg strips into the sauce mixture and stir.&nbsp;
</li>
<li>
Add the vinegar and spices to taste and remove from the heat. Chill the sauce mixture in the refrigerator.

While the sauce chills, cook the noodles in boiling salted water as directed on the package.&nbsp;
</li>
<li>
Rinse the cooked noodles several times in cold water. Add the second teaspoon of vegetable oil. Season to taste and mix.

Lay the noodles on a deep plate and top with the chilled sauce.
</li>
<li>
Add a dollop of your favorite spicy sauce. Sprinkle with additional seasonings to taste, and enjoy!
